There is something sobering and religious about walking under the iron archway, along the alley and down the steps leading to the subterranean studio that serves as the bread-making church that is le Fromentier. The space is bright, clean and decorated in a humble yet tasteful manner. It is filled with various giant wood-burning and industrial ovens and row upon row of freshly-baked breads, a fine selection of cheeses and pastries. This is the serious work of bread-making and these are its dedicated practitioners.
Describing the bakery’s selection of breads and pastries is like trying to nail gooey dough to the wall. There are simply too many and the bakery’s changing menu makes it hard to keep track of what loaves are baked on what day. That is why the bakery provides a bread menu. Imagine a cornucopia of breads made from every combination of grains and seeds from whole wheat to buckwheat and sunflower seeds to sesame seeds. Imagine breads flavoured with honey, corn, squash, tomatoes, nuts, olives and so many other delicious ingredients. Think of piping hot baguettes, raisin and cinnamon bread and a list of pastries that will make your toes curl.
