The famous Montreal bagel was created based on a family recipe that was passed down from generation to generation in Eastern Europe. In 1919, the founder of Fairmount Bagel Bakery, Isadore Shlafman, arrived in Canada and opened Montreal’s first bagel bakery on a side street adjacent to St-Laurent Boulevard. It is here that Montrealers first met the bagel, homemade and baked in a wood-burning oven. Later, Mr. Shlafman moved his shop to Fairmount Avenue. His son Jack later learned the art of making bagels from his father and continued the tradition according to the original family recipe.
Tradition and Modernity
Today, the family continues to employ the same methods inherited from the elder Shlafman. New varieties have been added to the selection that first made this Fairmount Avenue bakery famous all those years ago. In fact, three generations later, Irwin and Rhonda Shlafman still offer the original varieties (sesame, poppy, plain and cinnamon and raisin), the spicier ones (country cumin, onion, garlic) as well as several new ones (pesto and black olives, for example).
